Ah...that youtube video is crazy. I couldn't lift that entire rig like that each time, especially with the wind blowing. Hard enough just to pop the mast in with the sail streaming.
I don't have the sleeve, but rather just a strap. Truthfully, since I just go out and sail around for fun and never race, I don't bother with it....just more stuff to have to mess with!
With a decent breeze blowing, what I do is wait for a bit of a lull before attaching the hook. I just let the boat center itself and then at the right moment, snap on and tighten the line.

How could the boat move so much if it's tied off to the dock? At our launch, the wind does the same as yours, coming across, so when tied up, the boat flags out. It will move but mostly just point into the wind.

For me.....about the only thing I pre-rig is the main sheet running through the boom. (actually I leave it there all the time.)

I launch from a dock that sits crosswise to the wind and have the same issues! Ever tried dropping a fully loaded mast and sail with the wind behind you? Yow..Note that I can't wade in the water and have to rig while in the boat.
I do the same things...have the rudder and centerboard already...
As I recall, when you put us through our US Sailing Instructor course, you made us swim in the marina without any wetsuit, float for 5 minutes and tie knots while in the water...all in late December weather!

Yeah, you are supposed to have them on. If you sail Marina Del Rey, you stand a good chance of being pulled over. In Ventura Harbor, where I sail, everyone has their numbers on.
I've been looking at the Standard Horizon HX751, which seems to be about the same size as the ICom but a bit less expensive.
My PFD doesn't have pockets though so I'd have to attach it to the strap.

I'm considering carrying a marine radio with me and wondering if anyone has a favorite? ICom makes some good waterproof/floating ones as well as Standard Horizon. Ideally, I'd like something smallish that won't be a pain to attach to my PFD.

I used to run a mainsheet cleat like that years ago with my first Laser. Helped to take a lot of pressure off the hands. The downside to it was when fully hiked out, I couldn't always maintain a good angle on the line, would get hit with a gust of wind and swimming, swimming.......
